It’s that time of the year again, when the temperatures dip, and there’s a certain something in the air. Whatever that certain something is, you just want to feel warm and cozy, not just on the outside, but also deep inside. This is the perfect time for soup!

When it comes to soup, you have infinite choices. And I mean infinite. There are so many kinds of soup out there, and you simply have to follow your tastebuds to satisfy yourself. In case you are yearning for soup, but you do not know exactly what you want, here are the best soups for fall. Trust me, you won’t be disappointed with any of them!

Butternut Squash Soup

This creamy soup never fails to make one feel so much better on a cold day. Even better, it is so easy to make! All you need is butternut squash, which you should bake in the oven or steam in the microwave. While you are doing this, prepare the other ingredients – onion and celery. Saute these with a bit of olive oil. When the onion turns translucent, mix it with the squash and blend with milk. Add salt and pepper to taste. You can also add lemon juice for more flavor.

Potato Soup

There are so many variations of potato soup, but one of my favorites is this really simple recipe.

Ingredients: 1 onion (chopped), 1/2 cup butter, 1 cup leeks (chopped), 8 potatoes (sliced), 6 cups water, 1/2 tsp thyme (fresh), 1 ham bone, 1 cup heavy cream, salt and pepper

Method: First saute the onions in butter until translucent. Then add the water, potatoes, leeks, thyme, and ham bone. Wait till it boils then cover and simmer for about 30 minutes. Remove the bone and then blend the soup. Put the soup back into the pot, add cream, salt and pepper, while stirring. Enjoy!

Miso Soup

This soup is a staple in Japanese restaurants, and I never fail to order it. It can be easily made at home, though, as long as you keep the ingredients in stock. If you are feeling off, nothing beats miso soup! Here’s how to make a simple miso soup.

Ingredients: 2 tsp dashi granules, 4 cups water, 2 Tbs miso paste, 8 ounces of silken tofu (diced), 2 green onions (sliced)

Method: Combine water and dashi granules. Bring to a boil, over medium-high heat. When the water-dashi mixture boils, lower heat to medium and add miso paste. Make sure to whisk the soup. Add the tofu and the onion. Leave the soup to simmer for about 3 minutes, and serve immediately.

You can also make this heartier by adding slices of white fish. As for the dashi and miso paste, visit the nearest Asian store and you’ll be sure to find them!
